Sixty Forty, the farm and dining room on the Saanich Peninsula, is hosting its first collaboration dinner on Saturday, Nov. 14. Chef Paul Moran, a Top Chef Canada competitor, is cooking with chef Clark Park of Chobap Sushi Bar in Victoria, and the menu leans on Japan and on Vancouver Island fish, seafood and farm produce. It runs from 6 to 9:30 p.m. in Saanichton, about 25 minutes north of downtown Victoria.
The chefs
Chobap is a small sushi bar known for omakase, and the event listing says YAM Magazine recently named it Victoria’s Restaurant of the Year and Clark Park its Chef of the Year. Moran leads the kitchen at Sixty Forty, which has its own farm on site. According to the listing, he has just come back from a trip through Japan with ingredients and techniques he wants to try.
