The headline: two new Stars in Montréal

Hoogan et Beaufort was promoted to One Star. Michelin’s inspectors point to chef Marc-André Jetté’s wood-fired cooking (“even the desserts!”) in a converted industrial site with red-brick walls from 1904. Read our Hoogan et Beaufort profile.

Sushi Nishinokaze joined the guide with One Star. The inspectors praise chef Vincent Gee’s respect for Edomae tradition, rice seasoned with a blend of vinegars and served at a temperature matched to each fish, and Nova Scotia shrimp and kohada among the highlights.
