We opted for the tasting menu, and every course was beautifully presented and full of flavour. The dessert was absolutely exquisite and the perfect way to end the evening! The service was outstanding, with impeccable attention to detail. Definitely one of the best dining experiences we’ve had in Montreal.

From absolutely delicious and texturally beautiful pasta to woodfire cooked steak that melted in your mouth, you could feel the deep love for the ingredients and cooking techniques in each bite. The tasting menu felt like an adventure through scenic forest landscapes. I still use their bread as the gold standard for how bread should be cooked in a michelin star restaurant. Warm service, gorgeous interior and a menu of unparalleled quality. Love it!

We enjoyed our meal here end to end, from the warm oysters with apple and sabayon, to the final petit fours with wild berry compote in a meringue shell. Flavours are bold and distinct, sometimes with Asian and Nordic twists. Go for the tasting menu for the chef's total vision.

We came for an 8:30 reservation for two and ordered à la carte: six warm oysters, the tartlet, a pasta dish, and the rib steak. Our bill came to around $319 before tip. The oysters were probably the highlight. The sauce was excellent, although the oysters themselves felt slightly overcooked to me. The tartlet was fine, but nothing particularly memorable, essentially vegetables, cheese, and pastry without anything that made it feel special for a restaurant at this level. More concerning was an ingredient issue with the tartlet. The menu described it as containing green peas, and when the dish was initially served, we were specifically told it was sweet green pea. It looked like fava bean to us, so we asked another server, who then explained that because of the season, they had substituted fava beans. My partner has a fava bean allergy. I fully acknowledge that we should have proactively informed the restaurant about the allergy, so I am not blaming them for not knowing about it. However, if a listed ingredient has been substituted, especially with another legume, the staff should know what is actually in the dish and communicate it accurately. Being explicitly told “sweet green pea” when the dish actually contained fava bean is concerning. The rib steak was the biggest disappointment. It came with two side dishes, which were a nice addition, and the overall portion was generous. However, the steak itself was underseasoned and nothing particularly special. We originally requested medium, but our server recommended medium-rare, so we followed the recommendation. The steak arrived properly medium-rare, so the cooking temperature was not the problem. The problem was the quality of the meat. A very large portion had extremely tough sinew/connective tissue running through it. I ended up having to spit out several pieces because they simply could not be chewed. The steak knife provided was also surprisingly dull and struggled to cut through the meat. At the end, after I left a relatively low tip, the server asked whether something had been wrong. I explained that the food simply wasn’t to my taste and mentioned the steak. I was told that I should have said something earlier and that since we had eaten most of the food, there wasn’t anything they could do. The server also suggested the steak may have been chewy because we had asked for it to be cooked more. That explanation did not make much sense to me: we had accepted their recommendation of medium-rare, the steak was in fact medium-rare, and the issue was the large amount of tough connective tissue rather than overcooked meat. To be fair, the service throughout dinner was otherwise adequate. Plates were cleared quickly, our water was kept filled, and nobody was rude. But it also did not feel particularly attentive or welcoming. Nobody checked during the meal to ask how the dishes were, and the service overall felt fairly transactional. The atmosphere also surprised me. It was quite loud, the open dining room felt much more casual than I expected at this price point, and we noticed small bugs flying around during dinner. Ultimately, my biggest problem is value. At roughly $319 for two people before tip, I expected either exceptional food, exceptional service, or ideally both. I experienced neither. I could understand this meal much more easily at perhaps $200, solely because of portion. or even paying $250 if the steak had been genuinely outstanding. At this price, an underseasoned steak with that much inedible connective tissue is difficult to justify. Maybe the tasting menu provides a completely different experience, but based on the à la carte meal we had, I genuinely struggle to understand the level of hype surrounding Hoogan et Beaufort. I have had significantly better food and more polished service elsewhere in Montreal. I wanted to love this place. Unfortunately, based on this visit, I would not return.

My wife and I ordered the focaccia, tuna tartare, duck, monkfish, a peach and chamomile dessert, and a chocolate dessert. * Focaccia: Served warm with a lovely wood-fired aroma that lives up to their signature open-fire cooking. It was cooked to perfection—crispy on the outside, soft and fluffy on the inside. * Tuna Tartare: Incredibly fresh tuna balanced beautifully with the sweet peaches and crunchy nuts mixed inside. * Duck Dish: Duck can easily feel heavy, but the sauce, garnishes, and especially the cherries provided a brilliant balance. Pairing it with a local Quebec Pinot Noir was a match made in heaven. * Monkfish Dish: Served in a delicate white sauce, it was lighter than the duck and complemented the meal wonderfully. The seaweed garnish was the absolute highlight of the dish. * Desserts: The peach & chamomile dessert was light and refreshing without being overly sweet. My personal favorite was the chocolate dessert—the crunch, deep coffee flavor, and rich chocolate sweetness brought our meal to a flawless end.

The background
On May 11, 2026, the Michelin Guide promoted Hoogan et Beaufort to One Star, one of four new One-Star restaurants in Québec. Michelin’s inspectors describe a converted brownfield site that keeps its red-brick walls from 1904 and its metal framework, where chef Marc-André Jetté’s house specialty is wood-fired cooking, “even the desserts!”
The same release gave sommelier Hugo Duchesne the Michelin Sommelier Award. The restaurant describes a market-driven, ever-changing menu that uses no processed products, and a wine list of more than 800 references with older vintages.
