Peya, in East Vancouver, is new to the selection. Michelin describes chef Ashwani Dabas applying French technique to the Indian dishes he grew up with in New Delhi.

What the inspectors noticed

  • Local sourcing. Michelin highlights The Acorn in Mount Pleasant, which forages ingredients such as wild mushrooms, nettles and edible flowers from within a 100-kilometre radius, and Nero Tondo in East Vancouver, which uses as many B.C. ingredients as possible.
  • Chefs’ personal backgrounds. Many new Bib Gourmand and Recommended places pair international technique with a chef’s own heritage, the inspectors say — Kavita and Peya are their examples.
