YumYak's take

Two Michelin Stars (2026) for François-Emmanuel Nicol's secret boreal menu in Lower Town vaults.

Quick verdict

François-Emmanuel Nicol’s restaurant in centuries-old vaults below Québec City’s Lower Town, with Two Michelin Stars in the 2026 Québec selection for creative cooking from the boreal forest.

  • Order: The single secret menu, with or without one of the three pairings
  • Best for: A once-in-a-while dinner; the chef’s counter if you like watching the kitchen
  • Skip if: You’re on a budget, in a hurry or bringing young children (no kids’ menu, same price)

Official site

The background

Tanière³ (“Tanière cubed”) is set in a run of stone vaults beneath the Lower Town. Michelin counts four rooms under the ancestral vaults, one with a view of the brigade, plus a counter wrapped around the open kitchen. Chef-owner François-Emmanuel Nicol uses it as a research kitchen for the boreal terroir, buying from small producers and working with a team of foragers. The 2026 Québec guide gave it Two Stars.

The inspectors single out sophisticated cooking, rich sauces and careful balance, naming dishes like matured tuna with pickled matsutake and sunflower cream, and Québec Wagyu tataki with wild rose and morels. The menu itself is kept secret; guests choose the room, not the dishes.

What to order

  • The secret menu: one fixed menu that isn’t published. Food is $360 to $400 per person depending on the experience, date and time.
  • Vault dining room or chef’s counter: the counter seats up to 10 and puts you face to face with the brigade; the vault rooms take tables of two to six.
  • Pairings: Accord Collection ($250), Accord Expérience ($125) or an alcohol-free pairing ($110).

Before you book

Plan on about three hours. The vaults don’t take groups, and tables are two to six people. There’s no children’s menu and children pay the full price, according to the restaurant’s FAQ. Ask about mobility access when booking, because the dining rooms are in old vaults.
