They have created an amazing menu and it is clear that the chef and the team have poured their heart into creating a truly one of a kind experience. Also, the cocktails! Creative and fresh takes and, while I'm not normally a martini fan. the Moon Martini is a must.

I highly recommend to trying this place.
Amazing service, food, and atmosphere. Exactly what this neighborhood needs

I was excited to try such a unique concept, and despite some initial misunderstandings due to my not having a reservation, they were incredibly kind and accommodating. They went out of their way to seat us as soon as possible, and the service throughout was exceptional. The martinis were truly unlike anything Iโve tried before. You can tell how much thought, creativity, and attention to detail goes into every drink, and the flavours were phenomenal. Itโs clear that so much passion goes into creating this experience. Beyond the drinks themselves, it was the genuine kindness and hospitality of Sonia, her husband, and their team that really stood out. I hope this place continues to thrive and leaves a lasting mark on Vancouverโs bar scene for many years to come. We need more places like this!

YumYak's take
The Moon opened in Gastown in October 2026: chef Felix Maristany (ex-Kissa Tanto) cooks a fermentation-led menu in a 27-seat dining room, with martinis at the Moon Bar.
A new Gastown restaurant and martini bar from a former Kissa Tanto chef de cuisine, with a menu built on fermentation and preservation and a separate lobby bar for drinks and snacks.
- Order: A martini at the Moon Bar, then the chef’s multicourse menu at the counter
- Best for: Date night, a late drink in Gastown, natural and low-intervention wine
- Skip if: You want an early-week dinner; it opens Thursday to Sunday only
The background
The Moon comes from Wyatt Rybchinsky and Sonia Symoom, who lived in Gastown for years before opening here. Noms Magazine gave Oct. 23, 2026 as the opening date. Symoom describes the food as “borderless.”
Head chef Felix Maristany is a Cuban-American cook from Miami who worked in Spain, trained at PICA, was a sous chef at Cioppino’s and then chef de cuisine at Kissa Tanto. His menu leans on fermentation and preservation.
The 1,632-square-foot space holds a 27-seat dining room with a fully open kitchen and a chef’s counter. You can order seasonal dishes ร la carte or sit for a chef’s multicourse menu.
The bar and the wine list
- Moon Bar: the lobby bar pours martinis, signature cocktails and spirit-free drinks alongside snacks. Bar manager Zoe Bates was a top-four finalist at World Class Canada and has worked at Ellipsis, The Westin Bayshore and Sula, per Noms.
- Wine and tea: GM and wine director Claudia Fandino (Published on Main, Barbara, Burdock & Co) focuses on small organic producers and sake, with a tea list from O5 Tea.
- House wine: “Good Job,” a single-barrel 50/50 ChardonnayโMuscat blend made with Ursa Major.
